Elijah Durso-Sabina (Definition Forge) is a local Colorado maker who focuses on hand forged kitchen tools. Elijah is professionally a researcher in quantum error correction by day and tool maker after hours. He has been coming into our shop over the years sharing his creations, its been a joy to see the evolution of his work over time.
This blade is a hand forged integral chefs knife made from W1 high carbon tool steel hardened to about 61hrc. The blade features a full integral bolster which is faceted and satin polished then marked with his logo near the spine. The blade profile has a European style tip that allows for heavy rocking motion, while the heel has a very subtle belly and nice flat spot that excellent for push cutting. The hybrid western handle is made from desert Ironwood sporting a heirloom fit. This knife is very comfortable in hand and has great balance.
